I got tired of steaming or boiling cauliflower, so I decided to make this vegan oven-roasted cauliflower, flavored with garlic and lemon, and roasted until crispy. SOO GOOD!

Vegan Roasted Cauliflower Recipe
This cauliflower recipe is incredibly easy to make and will be ready in just 45 minutes. So far, this is my favorite way to add cauliflower to my dinner.
The recipe is sooo delicious, and customizable. Sometimes I like to use different spices like onion powder, paprika, cumin or even curry.
Just drizzle the cauliflower with some salt, pepper and olive oil, then roast it in the oven at a high temperature, and you will have the best side dish or snack ever.
I also like that this simple dish side dish is vegan, gluten free and keto friendly. So, it is perfect for everyone.
I like to serve this dish with Savoury Mince, Chicken Fajita Nachos, Paprika Chicken Pasta or Spicy Garlic Shrimp.

Ingredients

- Cauliflower head: Cut int bite-sized pieces or small cauliflower florets.
- Salt & Ground black pepper: To taste.
- Chili flakes: I love to add a spice kick; you can skip it if you want.
- Garlic: Use fresh garlic for the best flavor.
- Olive oil: Use extra virgin olive oil for better taste.
- Lemon
- Fresh basil leaves

How To Make This Vegan Dish

One: Preheat the oven to 210C/ 410F, line a sheet pan with parchment paper and use a sharp knife to cut the whole head of cauliflower into medium-sized florets, then wash them and drain well (photo 1).
Two: In a large bowl, mix all the olive oil, salt, black pepper, chilli flakes, lemon juice, minced garlic cloves and the fresh basil leaves (photo 2).
Three: Toss the cauliflower in the bowl, mix well all the ingredients using your hands (photo 3 & 4).

Four: Place cauliflower florets in a single layer in the baking tray and then bake in the preheated oven for 40-45 minutes (photo 5).
Five: Get the cauliflower out of the oven and sprinkle with some dried basil and serve!
Expert Tips
- To get crispy garlic roasted cauliflower, make sure to arrange the florets in a single layer and make sure to leave enough space between the florets to not get mushy.
- Don't overbake, or the cauliflower will come out dry.
- When the cauliflower turns to a golden brown, it is ready to serve.
- Either use a kitchen towel or salad spinner to dry the cauliflower after washing it.
- You can also roast frozen cauliflower. However, you will have to bake for additional 10-15 minutes.
- Store leftovers in an airtight container in the fridge for 3-4 days.

Serving Ideas
There are so many dishes to serve with this vegan garlic roasted cauliflower, such as Steak with Butter and Garlic, Grilled Chicken Liver with Garlic and lemon Juice or Stuffed Chicken Breast with Spinach.
You can also serve this dish with chicken such as Boom Boom Shrimp, Cheesy Gnocchi Bake and Mediterranean Mozzarella Chicken.
Is this cauliflower recipe good for meal prep?
Yes, you can divide it into 4 or 5 containers and keep it in the fridge. Reheat in the oven or air fryer.
