    This is an easy chicken casserole recipe packed with flavourful spices and cheese for a healthy family dinner. It is a superb way to make a beautifully tender and delicious chicken casserole. It makes a lovely weekend dinner as it is or alongside some grilled vegetables, rice or mashed potato (if you are not on a low carn diet) for a whole filling meal.

    The Best Chicken Casserole Recipe Ever

    This recipe is so easy; you will make this chicken casserole using one baking tray in less than 50 minutes. Simply put the tomato, olive oil and chopped spring onion together along with spices then toss the chicken in the mixture and sprinkle mozzarella cheese on top then bake. Leftovers can be stored in an airtight container for a couple of days, and it can be reheated easily when needed.

    • Extra virgin olive oil
    • Cherry tomatoes
    • Chopped spring onion
    • Mozzarella

    Spices

    • Fresh spring thyme
    • Salt
    • Ground black pepper
    • Chilli powder 
    • Garlic powder
    • Paprika

    How To Make This Easy Chicken Casserole Recipe

    1. Wash the chicken and pat them with a kitchen towel.
    2. Cut the chicken breasts lengthwise then arrange them in an ovenproof baking dish.
    3. Season the chicken breasts with salt, black pepper, paprika, garlic powder, chilli powder and fresh thyme leaves on both sides.
    4. Pour a tiny stream of olive oil over each chicken breast then add the chopped spring onion on the top of each one.
    5. Add the tomatoes between the chicken breasts in the baking dish.
    6. Sprinkle mozzarella cheese generously over them.
    7. Bake at 210C for 30 minutes then cover the top with foil and continue baking for another 15 minutes.
    8. Garnish with some chopped parsley (optional).
    9. Serve hot.
