Garlic Butter Herb Chicken Breast Recipe
This recipe is inspired by my Garlic Butter Chicken Bites recipe but this time, I didn't cut the chicken breast into bite-size pieces.
All I did was cook the chicken breast in chicken broth, garlic, fresh parsley, thyme, and some seasonings until it was juicy and flavourful. I served it to my family with Potato Borek and Malfouf Salad. This dish is perfect for busy weekday dinners since it is super simple.

Ingredients
Chicken breast: I used boneless skinless chicken breast.
Olive oil: To cook the chicken.
Fresh Garlic: I used it in making the flavorful garlic butter sauce.
Butter: Preferably unsalted butter.
Chicken broth/stock: I used store-bought, but if you have homemade broth, go ahead and use it.
Seasonings: I used cayenne pepper, onion powder, garlic powder, salt and ground black pepper.
Fresh Herbs: Parsley and thyme.

How To Make Garlic Butter Herb Chicken Breast
Prepare the chicken: Wash the chicken breasts, then cut them lengthwise. After that, pat them with paper towels to dry them.
Mix all the salt, black pepper, garlic powder, onion powder, and cayenne pepper, then sprinkle the mixture over the chicken breasts.
Cook the chicken: In a large skillet over medium heat, add the olive oil and butter; once the butter is melted, arrange the chicken breasts in the skillet and cook for 7-8 minutes on each side or until they become golden brown.
Transfer the chicken to a plate, then set aside.
Make the sauce: In the same skillet, saute the garlic for less than a minute, then add the chicken broth and thyme and bring the mixture to a boil.
Add the chicken breasts to the mixture for about 5-8 minutes or until the liquid reduces. Garnish with chopped parsley and serve.

- To get juicy chicken breasts, don't overcook the chicken.
- You can store this chicken dish in a sealed container in the fridge for up to 4-5 days. Reheat in the oven for 15-20 minutes or in the microwave for 2 minutes.
Variations & Substitutions
- Use chicken tenders or boneless chicken thighs instead of chicken breasts.
- Add more fresh herbs, such as fresh basil, rosemary or dill.
- Garnish your dish with some parmesan cheese.
- You may replace the seasoning used in this recipe with just 1 teaspoon of Italian seasoning.
- If you like your dish to be spicier, add ¼ teaspoon of red pepper flakes or chili powder.
- Cut the chicken into bite-size pieces to make garlic butter chicken bites.
- For extra flavor, add 1 tablespoon of lemon juice or zest.
Serving Ideas
I like to serve this dish alongside Bake Sweet Potatoes in Foil, Cheesy Courgette Fritters or Seaweed Rice Balls.
This dish also work wonderfully with Malfouf Salad and Elote Corn Salad.

If your chicken is still pink in color, it is undercooked, and if it is dry, it is overcooked. It is best to use a meat thermometer when the internal temperature reaches 165°F / 74°C the chicken is done.
