    Rich in protein, delicious, and so easy to make, Avocado Egg Sandwich is a healthy option for breakfast or lunch. Fried egg topped with mashed avocado and a few drops of Sriracha sauce.

    Eggs fried in butter give a heavenly creamy texture. Meanwhile, a smashed avocado seasoned with different condiments completes the whole savory and richness of the sandwich.

    There are many variations of sandwiches. However, if one wants a taste of the perfect creaminess texture, Avocado and Egg Sandwich is the best choice out there.

    What is better aside from its taste and texture is that Avocado Egg Breakfast Sandwich is rich source of protein. Protein, as known by many, helps our body to stay longer full. Hence, this sandwich is best eaten at breakfast or lunch since it will help people get through until lunchtime.

    What is The History of the Egg Sandwich?

    Many people may think that egg sandwiches had been around for quite some time now, perhaps centuries old. However, egg sandwiches are sort of new in the market. It was only around when the first world war had started.

    Rachel Khong and Lucky Peach wrote in 2017 that the British troops would usually sit around their trenches in the morning with a fried egg between breadsticks. They would pair the meal with a rum or tea.

    It was an efficient chow since the combination of egg and bread is abundant with protein and carbohydrates, enough to boost their energy for the war.

    Eventually, egg sandwiches evolved as time went by. Fried ones were now usually replaced by boiled eggs, and others included more condiments to the dish.

    • Eggs: There are many types of eggs, and the best thing about avocado egg sandwiches is that you can use any poultry egg just so long as it is fresh since fresh eggs mean more intact egg whites. If the egg is no longer new, there is a tendency that the egg will spread out too much when fried.
    • Avocados: Fresh avocados are a must! Don't use bruised avocados because they are either too lumpy for the sandwich or have a sour note. Remember to use ripe ones but not those that are already way too ripe. Chopped or diced avocados will do well for the sandwich. However, smashed avocados will give more flavor and add a creamy texture to the mixture.
    • Fresh Chives: Chives, preferably diced, will add color to the egg and will give a touch of onion flavor to the whole dish. Cooks commonly use chives to add flavor to eggs, and the sandwich will definitely need its magic for additional touches.
    • Butter: What is better than using butter to achieve a buttery egg? Butter will help the egg cooks evenly, and most of all, it will serve as the trigger pulled for the creamy filling texture of the sandwich. The butter may also be splattered all over the surface of the bread, depending on one's choice.
    • Olive Oil: The purpose of olive oil in this recipe is not to help to fry the eggs. We use olive oil to give a smooth and silky texture to the avocado. The combination of olive oil and avocado will surely improve one's health.
    • Lime Juice: It will add another exquisite flavor to the avocado.
    • Sriracha Sauce: This sauce is one of the most common hot and chili sauces. Sriracha sauce will help in enhancing the accompanying condiment of the Avocado Egg Sandwich.
    • Salt and pepper: The sandwich will seem a bit bland without the presence of salt and pepper. The best seasoning for the avocado egg sandwich is certainly salt and pepper.

    • In a mixing bowl, add avocado, olive oil, lime juice, chives, salt and pepper, mix and smash using a fork until slightly smooth.
    • In a medium-size skillet, melt the butter, then crack the eggs carefully (don't baste the yolks); cook the eggs for 1-2 minutes. Once the eggs are fully cooked, turn off the heat.
    • Now, add 2-3 tablespoons of the avocado mixture on one slice of the bread, top with one or two eggs and a few drops of sriracha sauce, then add the other slice of the bread.

    • Don't just slice nor dice the avocados; smash them to provide a creamy texture.

    • 4 slices of bread
    • 2 avocados , peeled, diced
    • 4 eggs , 2 per sandwich
    • 1 tablespoon fresh , chives, diced
    • 1 tablespoon butter

    • ¼ teaspoon salt
    • ⅛ teaspoon ground black pepper
