Ingredients
Caster sugar: Also called baking sugar or superfine sugar. You can also use light or dark brown sugar.
Plain flour: Better known as All-purpose flour.
Unsweetened Applesauce: Pick up your favourite store-bought applesauce brand or use a homemade applesauce.
Butter: Preferable unsalted, can be replaced with vegetable oil, avocado oil, light olive oil or melted coconut oil.
Baking powder: Just what you have at home.
Baking soda: Just what you already have at home.
Ground cinnamon: If you can’t find a container version, get some cinnamon sticks and grind it yourself.
Eggs: This is the rising agent which will make the bread fluffy
How to make Applesauce Bread?
Making cinnamon apple bread is quite similar to making any other regular cake, so it shouldn’t be very difficult to follow along.
One: First off, preheat your oven to 170 C or 325 F, and line a 2lb loaf tin with parchment paper.
Two: Once that is ready to go, start preparing the batter.
Three: (Mixing the wet ingredients) Beat the eggs with sugar in a large mixing bowl with the electric mixer until the mixture is pale yellow.
Four: Mix in the applesauce and melted butter until it is well combined in the same bowl.
Five: (Adding the dry ingredients) Stir in the flour, and baking powder, followed by the cinnamon and baking soda, until all the ingredients are well combined.
Six: The batter should be of fluffy consistency as opposed to too thick or too fluid/runny.
Seven: Transfer this well-whipped batter to the prepared loaf pan and bake in the oven for 45-50 minutes until the top of the applesauce loaf is golden brown.
Eight: Allow the loaf to cool completely before cutting. That’s it; this easy cake is ready to be devoured.
Top Tips!
- If you want to have an easier time cleaning up, you can use a disposable aluminium loaf pan, which is easy to transport also once the cake is ready.
- If you can, place the loaf cake in the centre of the oven. This cake shape is quite long, and we’d like it to be cooked fast and evenly as well.
- For the best texture, use smooth applesauce.
Recipe Variations
Here are a few additions that can make this cake a whole lot more interesting:
- Nutmeg and cloves are two additional warm spices that’ll make this cake more flavoursome.
- Instead of using only castor sugar, you can use a combination of castor and brown sugar. Brown sugar doesn’t just bring sweetness, but it has its own unique earthy flavour as well.
- Some chopped or diced apples are a great way to add some texture to this cake.
- You can add nuts of your choice. We think almonds, chopped walnuts, cashews, and pecans would be great in a homemade loaf cake.
- Add some vanilla extract or essence for some extra rich flavour.
- For a fancier apple loaf cake, you can pour some caramel on top once it’s out of the oven. Pour it in strings and coat the entire cake.
- You may use whole wheat flour instead of plain flour. However, the apple cake loaf may have a slightly different texture.
- For extra flavour you can add ½ teaspoon of pumpkin spice to the cake batter.
- Top your loaf cake with cream cheese frosting, whipped cream, cinnamon sugar or drizzle with maple glaze.
Serving Suggestions
This delicious Applesauce Bread is great for your high tea parties with your friends. It’s warm, homemade, and elegant.
Other than being served alongside tea or coffee, this sweet treat makes for a wholesome dessert after dinner, specially when coupled with a cream custard or even pudding.
Storage
Make ahead of time: There isn’t much you can prepare ahead of time, except perhaps grinding or pounding the cinnamon (if you’re using cinnamon sticks). We prepare this cake batter right before it is to be placed in the oven, so the rising agents stay active while baking.
Store: At room temperature, the cake will last a good 3 days. Given how delicious it is, you won’t need to store it for longer. But it can also last for 4-5 days if kept in the refrigerator in an airtight container. Make sure you place it in an air-tight container before putting it in the fridge.
Freeze: In the freezer, this cake can last a good 3 months. Just ensure that either the individual slices or the entire cake are wrapped in plastic wrap or placed in an air-tight container. You can also use a freezer bag (also called a zip lock bag) you can easily find at the grocery store.
To reheat: If you’d like to reheat the loaf cake, simply take it out of the freezer or fridge and unwrap it. Leave it out at room temperature. It may take a couple of hours, but it’ll defrost/thaw. Then, you can plop it in the oven for 10-15 minutes to gently reheat it. After which, it should be at a good temperature to eat.
Recipe FAQ
You’ll notice that we added diced apples in the “recipe variations” instead of the actual recipe of the loaf cake. This is because they’re optional and not necessary to be put in the batter. Applesauce is more than enough for the flavour. We’ve made them optional as we don’t know how long you plan on keeping your loaf cake. The apples can become mushy if the cake is not consumed in a couple of days. We also suggest you chop them right before you put them in the batter if you do plan on adding them that is.
Choosing the right kind of apples is key to them not turning mushy over time. We suggest that you go for some honey crisp, Fuji, pink lady, or galas apples. You can experiment and see which ones turn out the best. Don’t forget to comment down which ones work best for you, so you can help others make the right choice!
Also, cutting them with or without the peel on is totally your choice. Though we suggest keeping it on, for some interesting texture and authenticity. The peel will also soften after it’s baked and will taste very different in the cake.
Use a thermometer (also called a thermapen) and stick it right in the centre of the loaf. If the temperature is 190°F then the bread is ready and it can be taken out. If you don’t have a thermapen, then feel free to use the good old fork method. The fork method is when you stick a fork or toothpick and stick it right in the centre of the loaf. If it is clean when you take it out, then your bread is ready. If it isn’t clean when you take it out, then you can let it bake for a few more minutes and try poking the toothpick again.
