Coronation chicken sandwich is a classic British made with juicy chicken tossed in a delectable sauce made with mango chutney, curry powder, lemon juice, and mayonnaise. Super easy!
Cook the chicken: In a large pot, bring the water to a boil and then add the chicken and bay leaves and cook for 10-12 minutes or until the chicken is fully cooked. Then cut them into small pieces.

Make the Coronation chicken filling: In a large bowl, mix mango chutney, mayonnaise, dried apricots, lemon juice, coriander and curry powder. Then mix them with the dressing. Toss the chicken in the coronation sauce.
Make the sandwich: Spread the chicken filling on a slice of the bread, top with lettuce and then top with another slice. Slice in half and serve! Slice in half and enjoy!

Notes
If you prefer crisp sandwiches, you can toast your bread slightly before filling your sandwiches.
Although this recipe is traditionally made with chicken breasts, you can use any chicken you have in the freezer. If you ask me, it’s a great recipe to use any leftover chicken.
