Instructions
Preheat the oven to 180C / 350F and line a baking sheet with parchment paper.
In a medium-size bowl, add all the dry ingredients, and whisk.
1 ½ cups almond flour,
½ teaspoon baking soda,
⅓ cup erythritol,
3 tablespoon unsweetened cocoa powder
Add the softened butter, whisk until all combine.
¼ cup butter
Add the eggs and vanilla extract, keep whisking.
2 eggs,
1 teaspoon vanilla extract
Fold in the chocolate chips.
¼ cup unsweetened dark chocolate chips
Using a dough scoop, scoop one ball each time and place on the baking sheet.
Carefully try to flatten the top of each cookie using the spatula.
Then, add some chocolate chips on the top of each cookie.
Bake for 10 to 15 minutes! Let them cool completely before serving.
Notes
It is better to sift the almond flour to get rid of any lumps. Don't substitute almond flour with coconut flour; it won't work.
