In this keto chocolate cookie recipe, I have used a few ingredients because I love to keep my recipes as simple as they can be, and the outcome of this recipe was fantastic. The keto chocolate cookies are so soft, fudgy and chewy with a strong chocolate flavour; exactly how I like it.

Ingredients:

Chocolate Keto Cookies

Keto Chocolate Cookies With Almond Flour:

Sweetener: I always use erythritol in my recipes; in this cookie recipe, both erythritol and powdered erythritol will work fine and will give the same result, I have tried both.

Almond flour: it is better to sift the almond flour to get rid of any lumps. Don’t substitute almond flour with coconut flour; it won’t work.

Cocoa powder: use unsweetened 100% cocoa powder,  Hershey’s natural unsweetened 100% cocoa is a good brand to use.

What Are The Best Keto-Friendly Chocolate Chips:

Lily’s chocolate chips are the best brand to use; however, you can also use Paschs organic dark chocolate baking chips.

How To Make The Keto Chocolate Cookies:

  • Firstly, in a medium-size bowl, add all the dry ingredients, and whisk.
  • Then, add the softened butter, whisk until all combine.
  • After that, add the eggs and vanilla extract, keep whisking.
  • Finally, add the chocolate chips and stir using a spatula.
  • Line a baking sheet with a parchment paper.
  • Using a dough scoop, scoop one ball each time and place on the baking sheet.
  • Note: these cookies will spread a bit so, try to keep a free space between each one.
  • Carefully try to flatten the top of each cookie using the spatula.
  • Then, add some chocolate chips on the top of each cookie.
  • After that, bake for around 10 to 15 minutes.

Tips And Suggestions For Better Sugar-Free Chocolate Cookies:

  • If you enjoy sweeter cookies, you can add 1/2 cup of erythritol instead of 1/3 cup.
  • You can add some chopped nuts on the top of each cookie if fancy.
  • These cookies come out of oven soft, be careful with them and leave them to cool down on a cooling rack.
  • You can be creative and use your imagination to decorate them if you like.
