    Keto Almond Flour Chocolate Chip Cookies

    I made these incredibly easy keto chocolate chip cookies with almond flour in just a few simple steps, which I will share with you.

    Keto Almond Flour Chocolate Chip Cookies

    Seriously, of all the low-carb and sugar-free cookie recipes I've made over the years, these cookies are my favorite ones.

    They are soft, chewy, and so delicious. They are also gluten-free.

    This is a super easy recipe to make at home; all you need to do is mix the wet ingredients and dry ingredients in 2 separate bowls, combine both, scoop the batter into balls, and then bake. SO SIMPLE.

    I’ve learned a few tricks that really help in making the best keto chocolate chip cookies, and I’m SO excited to share them with you!

    I highly recommend using good-quality chocolate chips; this is important. I used Lily's dark chocolate chips, which are sweetened by stevia.

    Also, Please don't use coconut flour instead of almond flour because they are totally different, and if you do so, you will end up with a failed result.

    Ingredients & Substitutions

    • Almond flour: This recipe calls for almond flour; it is also my favourite gluten-free flour substitute in baking. I used Bob's red mill almond flour.
    • Egg: This recipe calls for just one egg at room temperature.
    • Dark chocolate chips: I prefer to use unsweetened or the ones that are sweetened with stevia.
    • Powdered Erythritol sweetener: I also like monk fruit sweetener.
    • Coconut milk: I used unsweetened coconut milk, you may use unsweetened almond milk instead.
    • Butter: I prefer to use unsalted softened butter. You can use coconut oil instead.
    • Orange extract: I like to give the cookies a hint of orange flavor because, in my opinion, it pairs so well with chocolate. You can replace it with orange zest if you want.
    • Baking soda: Helps in making the cookies soft.

    How to Make Keto Almond Flour Chocolate Chip Cookies

    Preparation: Preheat the oven at 180C / 356F and line a baking sheet with parchment paper.

    One: Start by beating the egg for 1 to 2 minutes using a hand mixer, until double in size.

    Mix egg, butter, erythritol, coconut milk and orange extract.

    Two: Add the butter, erythritol, coconut milk and orange extract keep mixing until well combined.

    Three: In another mixing bowl, mix almond flour and baking soda.

    Mix in almond flour and baking soda.

    Four: Then, combine wet and dry ingredients together and mix well until a smooth dough formed.

    Fold in the chocolate chips.

    Five: After that, Add the chocolate chips and stir with a wooden spoon or spatula.

    Mix until combined.

    Six: refrigerate the cookie batter for about 30 minutes.

    Pro Tip: It is so important to refrigerate the cookies before baking them; otherwise, the chocolate chips will spread greatly.

    Shape the cookies and put in the baking sheet.

    Seven: After that, use a 2-tablespoon cookie scoop to form 16 balls from the dough, then flatten the balls, forming cookie shapes.

    Refrigerate the keto cookies.

    Eight: Place the cookies into the baking sheet, leaving 1 inch between each other. Bake the keto chocolate cookies for 10-15 minutes or until golden brown. Let the cookies cool on a wire rack before serving.

    My Tips

    • The cookies will come from the oven very soft, so don’t move them until they completely cool down.
    • I recommend using a cookie scoop to scoop the cookie dough, so all the cookies will be the same size and shape.
    • To store these almond flour chocolate chip cookies, put them in an airtight container. They will last for 2-3 days at room temperature or a whole week in the fridge.

    • Fold in the chocolate chips and stir with a wooden spoon or spatula.
      1 cup dark chocolate chips
    • Now, refrigerate the dough for about 30 minutes.
    • Form 16 balls from the dough, then flatten the balls forming cookie shapes.
    • Place the cookies into the baking sheet, leaving 1 inch between each other. Bake the cookies for 10-15 minutes.
    • Let the them cool on a wire rack before serving.
