    Keto Vanilla Ice Cream (No Eggs)

    Since I started making my keto ice cream recipes at home, I have never gone back to store-bought ones. This Keto vanilla ice cream is super creamy, rich, and egg-free. It is also made with whey protein powder and is sugar-free.

    Keto Vanilla Ice Cream Recipe

    What I like the most about this recipe is it only calls for 5 ingredients, and you don't have to use an ice cream maker to make this keto ice cream recipe; I made this recipe without one, and it was AMAZING.

    I used my creamy vanilla ice cream ½ a scoop of Whey protein powder, and of course, I chose the vanilla flavour since I am making keto vanilla ice cream. This ice cream turned out absolutely DELICIOUS!

    I find this ice cream to be the best keto treat to have when I need a treat. For me, it is such a delicious treat in summer or winter.

    • Heavy cream: I recommend using it cold.
    • Almond milk: I prefer to use unsweetened almond milk.
    • Vanilla extract: To flavor.
    • Erythritol: I used Erythritol but you can use any sugar substitute you have at home.
    • Whey protein powder vanilla flavour: I used this whey protein powder with vanilla flavor, but you may use any flavor you like.
    • Chopped pistachio (optional): For topping.

    How To Make Keto Vanilla Ice Cream?

    Steps of making the recipe.

    First step: In a big bowl, add heavy cream, almond milk, vanilla extract, Protein powder and Erythritol. (photo 1).

    Second step: Then, using an electric whisk, beat these 5 ingredients together for about 6 to 8 minutes, or until the mixture thickens and has a creamy texture. (photo 2).

    Third step: Put the ice cream in an airtight container and freeze for 4 to 5 hours. Garnish with some chopped pistachio or with your favorite toppings (optional).

    Variations & Substitutions

    • Use coconut milk instead of almond milk.
    • Top your ice cream with white chocolate chips.
    • Use unsweetened vanilla almond milk instead of plain almond milk.
    • Use pure maple syrup instead of the sugar substitute.
    • To make chocolate protein powder add ½ cup of cocoa powder.
    • For best results, I recommend using a high-quality protein powder.

    Topping Options

    Here are some of my favorite topping for ice cream:

    • Drizzle melted peanut butter on top
    • Chocolate sauce
    • Sugar-Free Raspberry Jam
    • Fresh fruit
    • Keto Nutella
    • Your favorite nuts.

    How To Serve

    Personally, I like to serve it on top of Almond Flour Chocolate Cake, Gluten Free Carrot Cake or Almond Flour Chocolate Mug Cake.

    How To Store

    To store: I keep this ice cream in a freezer-safe container in the freezer. It lasts for 1-2 months.

    Ingredients

    • 1 cup heavy cream
    • ½ cup almond milk
    • 3 teaspoon vanilla extract
    • ½ scoop Protein powder vanilla flavour
    • 3 tablespoon erythritol
    • 1 tablespoon chopped pistachio (optional)

    Instructions

    • In a big bowl, add heavy cream, almond milk, vanilla extract, Protein powder and Erythritol.
