This cabbage roll soup is a comforting and super delicious soup made with almost the same ingredients used in making a stuffed cabbage roll recipe and in way less effort and time.
Cabbage Roll Soup
My cabbage roll soup is filled with ground beef, cabbage, rice, and carrots. I guarantee you that even if you aren't a big fan of cabbage, you will love it!
This is my best soup recipe to have on a chilly day. It is flavourful, healthy, and comforting. Also, I prepare it quickly, in just 30 minutes, which makes it the perfect choice on busy weekdays.
My mother is the queen of baked cabbage rolls, and she was surprised when she tried my cabbage roll soup; she said WOW, it is the same flavor with less effort.
I used green cabbage in this stew; however, you can use red cabbage if you already have it in your fridge. You will have the same result.
Ingredients
Ground beef: I use extra lean ground beef.
Vegetables: I used onion, garlic, green cabbage and carrots.
Note: I prefer to chop the cabbage coarsely for better texture.
Tomato sauce: I recommend using a good quality tomato sauce for the best results.
Tomato Paste
Chicken broth: I used store-bought broth; however, you can use homemade if you have some on hand.
Vegetable oil: You may use sunflower oil or avocado oil instead.
Rice: I used uncooked long grain jasmine rice. If you like to replace white rice with brown rice, you will have to increase the cooking time by 10-15 minutes.
Seasonings: I kept it simple; I only used bay leaf, salt and black pepper.
Dill: For extra flavor.

How To Make Cabbage Roll Soup?
One: In a pot, heat the oil on medium heat then add the ground beef, salt, and black pepper. Break up the meat using a wooden spoon. Cook until the meat is brown (about 5 minutes).
Two: Add garlic, onion, and carrots and cook for another 2 minutes, stirring occasionally. Add chopped cabbage, dill, bay leaf, tomato sauce, chicken broth, and rice, stir.
Three: Add the tomato paste and Bring everything to a boil then lower the heat and simmer for 20-30 minutes or until the rice is fully cooked.
Four: Garnish with chopped dill and serve.
Other Veggies To Add
Almost all the veggies, such as kale, sweetcorn, spinach, cauliflower, tomatoes, or peas, will go well in this soup.
Make Cabbage Roll Soup In The Slow Cooker
You can make this soup recipe beautifully in the slow cooker. I suggest browning the beef first before adding all the other ingredients into the crockpot to cook.
It will take up to 4 hours on low heat to become fully cooked. You can also make a big patch of it and freeze it for later.
