    Mango, Lime, and Coconut Popsicles Recipe

    This mango coconut popsicle has a smooth and icy texture, perfect for a snack on a summery and humid day. The popsicle also offers a tropically sweet taste that suits the whole summer aesthetic.

    Preparing this heavenly snack comes in two ways. One can just combine all three main ingredients— mango, lime, and coconut. The other way is to keep them all separated by layering the popsicle - different methods, the same outcome. They are still wonderfully sweet.

    This recipe has the objective of cooling down the warmth that came from the heat of the sun. The only twist is that it contains ingredients that are way healthier than the preservatives, sugar, and other questionable additives that usual popsicles have. This will also provide ways to make it more delicious and enjoyable.

    In a 2013 article written by Stephanie Butler for History Channel, she noted an 11-year old boy who had invented popsicles. His name was Frank Epperson from Oakland, California. It was in the year 1905 when his creativity gave birth to what we know now as popsicles. He had accidentally left a glass full of water and powdered soda mix overnight outside in the cold winter.

    It was frozen when he found it again the next day, along with the wooden stick for stirring.

    Frank knew that he had created something new, so he continued making it for his peers, who called it Eppsicles. When he grew up, he still made popsicles for his children, but the children called it Popsicles this time around. In the year 1923, Frank finally patented his creation due to the wide recognition it received.

    • Icing Sugar. What is a better sweetener than sugar that easily dissolves in liquid? Icing sugar is commonly used in cakes as frosting and designs. We can also use it in cold beverages. It is an adequate substitute for the regular sugar we can find in our household since it prevents caking and does not crystallize.
    • Lime. The lime for this recipe has to be finely grated zest and juice. The zested and juiced lime add concentrated tangy citrus flavor to the popsicle and balance the mango's sweetness. Lime has a naturally refreshing tart taste; that is why it is perfect for the tropical delight of the popsicle when it gets served and consumed.

    How to make Mango, Lime, and Coconut Popsicles?

    In a mixing bowl, mix yoghurt, vanilla beans and icing sugar.
    Layer alternate spoonfuls of the two mixtures.
    • Put the mango chunks in the food processor or the blender and pulse until they become puree.
    • In a mixing bowl, mix coconut yoghurt, vanilla beans, icing sugar, lime zest and juice until combined.
    • Layer alternate spoonfuls of the coconut yoghurt and the mango puree into 11 lolly moulds.
    • Tap the mixture down to remove air bubbles, then put in the freezer overnight or until solid. Remove from the moulds and serve.

    Top Tips for a Better Popsicle Experience!

    • Do not use overly riped mangoes because it will give the popsicle a sour taste.
    • Blending the mangoes well will give your popsicle a smoother texture.
    • Tone down on the icing sugar if the mixture is already over-the-top sweet to balance the taste.
    • If the mangoes have a sour tone, a drop of honey or maple syrup will make the taste go right again.
    • To have more creative popsicles, especially for kids, use molds that have different shapes and sizes.

    Ingredients
