    Easy, creamy Tropical Popsicles made with mango, lime and coconut yogurt. They are the perfect summer treat for adults and kids!

    Creamy Popsicles With Tropical Flavours

    I absolutely love these popsicles. My trick for flavorful, creamy popsicles is NOT to mix the mangoes and yogurt together. I just like to keep them separated.

    I found that mixing all the ingredients together changes the sweetness and the flavors of these pops. Also, it will prevent me from making these lovely colourful popsicles.

    These Tropical Popsicles have smooth and icy texture, perfect for a treat on a summery and humid day. They are also creamy thanks to the coconut yogurt.

    The popsicle also offers a tropically sweet taste that suits the whole summer vibe.

    What's in These Tropical Popsicles?

    • Ripe Mangoes. The peeled and roughly cut into chunks of ripe mango will serve as the prominent flavor of the popsicle. Mangoes have a sweetness typically likened to that of a "tropical floral taste." The sweetness and juiciness of the mango play a vital role in the whole recipe.
    • Lime. I like the lime for this recipe to be finely grated zest and juice. The zested and juiced lime add concentrated tangy citrus flavor to the popsicle and balance the mango's sweetness.
    • Coconut Yogurt. Coconut yogurt possesses a creamy and thick consistency perfect for the mixture of the popsicle. It tastes mildly sweet, not as bursting as the other ingredients.
    • Vanilla Bean Paste. For me, it is an ideal flavoring for popsicles.
    • Icing Sugar. It easily dissolves in liquid, and it does not crystallize.

    Variations & Substitutions

    • Vanilla bean paste is really costly, and sometimes it is not available in the nearest store, so honey or maple syrup can be a good substitute for it.
    • Replace icing sugar with regular white sugar without altering the taste of the popsicle.

    How To Make Creamy Tropical Popsicles?

    Beat the mango chunks in the food processor until puree. Mix the yogurt, line and vanilla in a bowl.

    One: Put the mango chunks in the food processor or the blender and pulse until they become puree.

    Two: In a mixing bowl, mix coconut yogurt, vanilla beans, icing sugar, lime zest and juice until combined.

    Alternate spoonfuls of the coconut yogurt and the mango puree into the lolly molds.

    Three: Layer alternate spoonfuls of the coconut yoghurt and the mango puree into 11 lolly molds.

    Four: Tap the molds down to remove air bubbles, then put in the freezer overnight or until solid. Remove from the molds and serve.

    My Tips for a Better Popsicle Experience!

    • Do not use overly ripped mangoes because it will give the popsicle a sour taste.
    • Blending the mangoes well will give your popsicle a smoother texture.
    • Tone down on the icing sugar if the mixture is already over-the-top sweet to balance the taste.
    • If the mangoes have a sour tone, a drop of honey or maple syrup will make the taste go right again.
    • To have more creative popsicles, especially for kids, use lolly molds that have different shapes and sizes.

    Serving Suggestions

    I love to complete these tropical popsicles with fruits to achieve a summery vibe at home. I don't have to travel to Hawaii and other exotic equatorial places.

    All I have to do is to serve these popsicles with more tropical fruits such as bananas, grapes, pineapples, and watermelons. You can do the same and enjoy this refreshing combo for a hot day.

    For how long should I put the popsicles in the freezer to freeze?

    It usually takes at least four (4) hours to let the popsicle achieve the frozen texture that is perfect for serving.

    How should I store the popsicles in the freezer?

    Keep the popsicles in the molds, where they will take their shapes as they freeze inside the freezer. If you don't have popsicle molds you can use any small freezer-safe cups.

    Ingredients

    • 400 g coconut yogurt
    • 1 teaspoon vanilla bean paste
    • 2 tablespoon icing sugar
