Curry Fried Rice with Chicken
Attention, curry lovers! This dish is packed with flavor and aromas. I assure you that not only does this recipe taste good, but it also smells great.
The yellow curry powder worked wonders, elevating the flavour of this dish to the next level. I often incorporate it into many of my other fried rice recipes as well.
The recipe is so good and easy; I use leftover rice I have in the fridge, so I don't have to cook the rice.
The vegetables I used in this dish are fresh, I used diced bell pepper and carrots to add a delightful crunch and peas for lovely green color. However, this dish is totally customizable. You can use any vegetables of your choice.
I also used diced chicken breast, I find that chicken breast goes better with curry fried rice than chicken thighs.
Incorporating scrambled eggs is super easy and delicious as well, but you may skip it if you don't like eggs.
The secret behind the amazing flavor of this dish is yellow curry powder; however, there are 3 levels of intensity of curry powder: mild, hot, and medium, so be careful about which intensity you like to use. I used medium curry powder which gives an exquisite flavour to my fried rice.

Chicken Breast: I used 2 boneless and skinless chicken breasts cut into small cubes.
Eggs: I like to incorporate scrambled eggs into my dish. I used 3 large eggs.
Yellow curry powder: The star of the dish. I used medium curry powder, which filled with rich and bold flavors but will not overwhelm you. It has a mild and subtle spice to it, enough to give you a hint of heat.
Onions, Garlic And Fresh Ginger: They give aroma and added flavor to the dish.
Vegetables: I used bell pepper, carrots and green peas.
Cooked rice: I used one day old rice because it tends to mix the other ingredients. You can use any kind of rice. You can use jasmine rice, brown rice or basmati rice.
Vegetable Oil: Just small amount to cook chicken and vegetables in a skillet.
Green onion: I used it for garnishing.
How to Make Curry Fried Rice with Chicken and vegetables?
Step 1: Prepare the chicken breasts
Season the chicken with salt and pepper on both sides and set aside.
Step 2: Cook the eggs
Heat a tablespoon of oil in a large skillet over medium high heat, add the eggs, and cook well; transfer it to a plate and set aside.
Step 3: Cook the chicken
Now, add another tablespoon of oil to the same skillet, and cook the chicken pieces for 4-5 minutes or until fully cooked. Transfer the cooked chicken breasts to a plate, and then set it aside.
Step 4: Cook the vegetables
In the same skillet, add onions, carrots, and bell pepper and stir fry for 2-3 minutes (stirring occasionally) until slightly softened. Add ginger, garlic, stir and then add the peas, and cook for 1-2 minutes more.
Step 5: Add in rice and curry
Add in the cooked rice, breaking it up with a spatula, and curry powder. Drizzle in the water and mix well until incorporated.
Step 6: Add in the scrambled eggs and chicken
Return cooked chicken and the scrambled eggs to the skillet, add salt and pepper and mix until combined.
Garnish with green onions, and serve!
Tips For Making Perfect Fried Rice
- Go for the best yellow curry powder. This will be the base of your recipe, to ensure that the dish tastes great go with a curry powder brand known for its great flavor.
- Make this dish on day-old rice. Old rice tends to be drier, so the flavor sticks to it better. Cooked rice can be too mushy and moist.
- Do not cook the Fried Rice all in one go. For best results, make sure to follow the recipe and cook the dish in parts.
- You can heat this in the microwave or using the stovetop.
