What Is Fraisier Cake?
You must have heard of "Fraisier Cake" before. It sounds fancy, I know. But would you believe it if you were told that this "Fraisier Cake" is just a fancier and more elegant version of our French Strawberry Cake?
Originally, these strawberry cakes were made of a few simple ingredients like strawberries and Créme mousseline. Now, many variations have sprouted, and more flavorful versions of strawberry cakes emerged.
However, I cannot help but argue that my French Strawberry Cake version is the most convenient and delicious among them all.

Ingredients

Butter. Butter helps me create and achieve the light and tender texture I was looking for in this recipe.
Sugar. I used white sugar to sweeten the cake batter, but brown sugar works well too.
Eggs. I used 2 large eggs; make sure they are at room temperature.
Vanilla Extract. It enhanced all flavors found in this recipe.
Flour. I used all purpose flour because it creates a lighter textured cake.
Baking Powder. It allows for a lighter and fluffier cake.
Sour Cream. Sour cream has a creamy texture that is ideal for turning your baked goods a little bit moist.
Fresh Strawberries. Fresh strawberries are the primary flavor of this cake. It is sweet and juicy, perfect for the recipe!
Powdered Sugar. I used it to decorate the top of my baked strawberry cake.
Variations & Substitutions
- Make this recipe taste even more strawberry-like by mixing store-bought strawberry compote with the cake batter!
- Top the cake with sliced strawberries and whip cream instead of powdered sugar!
- You may use full-fat and plain Greek yogurt instead of sour cream. It too will make this dish moist in texture.
How To Make French Strawberry Cake?
Before starting, preheat the oven to 180C/ 350F and line a 20 cm springform pan with baking paper.
One: In a mixing bowl, whisk together butter and sugar for about 2-3 minutes, until fluffy.
Two: Whisk in the eggs (one at a time), sour cream and vanilla extract.
Three: Now, stir in flour, baking powder, and salt until combined.
Four: Fold in the sliced strawberries.
Five: Pour the batter into the pan and bake for about 40-45 minutes.
Six: Let the cake cool completely, then remove it from the pan and dust it with powdered sugar; cut and serve!

- Follow this recipe step-by-step to avoid making a huge mistake in baking this cake. Make sure that you are using room temperature ingredients to combine them easily.
- Don't, under any temptation, try to open the oven for a peek to see what has become of your cake batter. Opening the oven while baking is not yet complete will allow heat to escape, which will alter the temperature inside the oven and will cause the cake to sink or collapse.
- Dust the springform pan with flour or butter from the sides to the bottom before filling it with baking paper to make sure that the cake will not stick.
