I have plenty of mixed berries, which I don't know what to do with. So, I made this DELICIOUS mixed berry cake with cream and fresh berries, and it turned out AMAZING!

Fresh Summer Berry Cake
I really like this cake because it is simple and ready in less than 40 minutes!
The whip cream and berries on top of the cake make this cake extra creamy and delicious. The texture is soft and fluffy yet rich and delicious!
For me, I like to serve it with a cup of white chocolate latte or date shake for breakfast. It is also a good a dessert or snack in the afternoon.

You'll Need
Dry ingredients: I used all-purpose flour, baking powder, baking soda and granulated sugar.
For the wet ingredients: I used 4 large eggs at room temperature, vanilla extract, butter, 1 cup of whole milk and ½ cup sour cream.
Toppings: Whipped cream, strawberry, blueberry, raspberry and blackberry. I don't recommend using frozen berries in making this berries cake.

How to Make Mixed Berry Cake?
Before starting, preheat the oven to 177°C / 350°F and grease with butter three 20 cm cake tins or line with parchment paper.

One (Make The Cake): In a mixing bowl, whisk butter and sugar until smooth and creamy.
Two: Whisk in eggs, sour cream and vanilla extract, beat for 1-2 minutes until well combined.
Three: Add flour, baking powder, baking soda, and salt, mix until combined.
Pro Tip: Overmixing the batter will result in a dry, dense cake instead of a soft and fluffy one.

Four: Pour the batter evenly into the three cake tins. Bake for 20-25 minutes or until the cakes are baked through.
Pro Tip: Divide the batter between the 3 cake tins equally. To do so, use a measuring cup to scoop the batter into the pans.
Five: Allow cakes to cool completely.

Six (Make The Whipped Cream): Using a hand mixer, whip heavy cream, powdered sugar, vanilla extract for 2-3 minutes until peaks form.

Seven (Assemble The Berry Cake): Place one of the cake layers on the serving plate, spread about ½ cup of whipped cream on top, followed by a single layer of mixed berries on top.
Eight: Top with the second cake layer and repeat. Spread remaining whipped cream on top and garnish with fresh berries. Cut the cate and serve.
