All-purpose Flour. We use all-purpose flour for this recipe to build the structure of the Summer Berry Cake; This cake also achieves its fluffy texture because of all-purpose flour.
Butter. Add butter to the mixture to add moisture and more flavor to the cake.
Baking Powder. To leaven your cake, add the right amount of baking powder.
Baking Soda. Baking soda, like baking powder, is a leavening agent, and by adding this to your cake mixture, the batter will rise when it bakes.
Oil. The most important use of oil in baking is to keep the finished product moist. Adding oil to the mixture slows down gluten formation, which in return keeps the Berry Cake tender and fluffy in texture! I used sunflower oil. However, you can use vegetable oil if you like.
Eggs. They contain proteins, and in the baking process, these proteins coagulate, which gives the mixture a glue-like consistency that helps shape and forms the cake. Eggs will also add flavor and color to the Summer Berry Cake once the baking process is complete.

Make the cake: Preheat the oven to 177°C, grease with butter three 20 cm cake tins or line with parchment paper.
In a mixing bowl, whisk butter and sugar until smooth and creamy.
Whisk in eggs, sour cream and vanilla extract, beat for 1-2 minutes until well combined.
Add flour, baking powder, baking soda, and salt, mix until combined.
Pour the batter evenly into the three cake tins.
Bake for 20-25 minutes or until the cakes are baked through.
Allow cakes to cool completely in the tins.
Make the whipped cream: Using a hand mixer, whip heavy cream, powdered sugar, vanilla extract for 2-3 minutes until peaks form.
Assemble the cake: Place 1 cake layer on the serving plate, spread 1 cup of whipped cream on top, followed by a single layer of mixed berries on top.
Top with the second cake layer and repeat. Spread remaining whipped cream on top and garnish with fresh berries. Cut the cate and serve.
