The best Summer Berry Cake ever, made with simple ingredients and ready in less than 40 minutes! Perfect for dessert or snack!

The whip cream and berries on top of the cake make this cake extra creamy and delicious. The texture is soft yet rich; it is spongey but not as fluffy as eating plain air.

Mixed Berry Cake Ingredients
For The Cake
All-purpose Flour. I use all-purpose flour for this recipe to get a fluffy texture because.
Butter. Add butter to the mixture to add moisture and more flavor to the cake.
Baking Powder. For a fluffy texture.
Baking Soda. Baking soda, like baking powder, is a leavening agent, and by adding this to your cake mixture, the batter will rise when it bakes.
Eggs. I used 4 large eggs at room temperature.
Vanilla Extract. Add a few drops to make your flavorful!
Granulated Sugar. It will add sweetness to the cake. It also allows the cake to hold its moist for a better texture.
Whole milk. I used 1 cup of whole milk, you may use non dairy milk if you want.
Sour Cream. Together with whole milk, sour cream will create a better consistency for the batter.
For Berries and whipped cream
Berries. In this recipe I used strawberry, blueberry, raspberry and blackberry. I don't recommend using frozen berries in making this berries cake.
Heavy Cream. It gives the Berry Cake that creamy and mild to sweet flavor.
Powdered Sugar. It provides more sweetness to the whipped cream. it will also give the mix a good consistency.

How to Make Fresh Berry Cake?
Before starting, preheat the oven to 177ยฐC / 350ยฐF and grease with butter three 20 cm cake tins or line with parchment paper.
One (Make The Cake): In a mixing bowl, whisk butter and sugar until smooth and creamy.
Two: Whisk in eggs, sour cream and vanilla extract, beat for 1-2 minutes until well combined.
Three: Add flour, baking powder, baking soda, and salt, mix until combined.
Pro Tip: Overmixing the batter will result in a dry, dense cake instead of a soft and fluffy one.
Four: Pour the batter evenly into the three cake tins. Bake for 20-25 minutes or until the cakes are baked through.
Pro Tip: Divide the batter between the 3 cake tins equally. To do so, use a measuring cup to scoop the batter into the pans.
Five: Allow cakes to cool completely.
Six (Make The Whipped Cream): Using a hand mixer, whip heavy cream, powdered sugar, vanilla extract for 2-3 minutes until peaks form.
Seven (Assemble The Berry Cake): Place one of the cake layers on the serving plate, spread about ยฝ cup of whipped cream on top, followed by a single layer of mixed berries on top.
Eight: Top with the second cake layer and repeat. Spread remaining whipped cream on top and garnish with fresh berries. Cut the cate and serve.
Top Tips!
- Measure your ingredients correctly. Do not experiment by merely adding ingredients and more amounts to the mixture. To ensure accuracy, use the correct measuring tools instead of eyeballing.
- Store leftovers in an airtight container in the fridge for 1-2 days.
Variations & Substitutions
- You don't have to use all four kinds of berries in making this cake; use whatever you have on hand.
- Feel free to drizzle the cake with chocolate sauce. You can also scatter some icing sugar on the top of the cake.
How To Serve This Mixed Berry Cake
Serve this mixed berry cake with green tea, coffee, orange juice or a cup of milk. For me, I like to serve it with a cup of white chocolate latte or date shake.
