I like the simplicity of this recipe, adding a few ingredients together, whisking, then microwave for 90 seconds, and there you are. This beautiful, matcha green tea mug cake is super easy and delicious.
I also like to add some chocolate chips on top of this matcha cake to give the flavour a sweet kick.
What Is Matcha Green Tea?
Matcha is a traditional Japanese tea which comes from the same plant as green tea, but it is produced from the whole leaf. Matcha has a slight bitterness along with a mild sweet flavour.

How To Choose The Best Matcha Powder?
When I buy matcha, I always check for the below color, texture, odour and sometimes even taste:
- Color: I look for a very bright green colour.
- Texture: If I rub the matcha green tea between my fingers, it must have a super smooth and fine texture.
- Odour: Matcha has a fresh leaf smell.
- Taste: High-quality matcha must have a grassy and creamy taste with a slight bitterness.

- Almond flour: My main flour substitute.
- Coconut flour: I add a little bit just to fluff the almond flour.
- Matcha powder: the star of this recipe.
- Swerve confectioners: You may use and sweetener you have on hand.
- Vanilla extract: To flavor.
- Egg: I used one large egg.
- Butter: For a rich flavor but you can replace butter with avocado or canola oil.
- Baking powder: It helps make this mug cake extra fluffy.
- Unsweetened chocolate chips: For topping.
Note: This recipe makes one large mug or two small mugs.
How To Make Matcha Mug Cake
One: In a small bowl, add eggs and vanilla extract then whisk.
Two: Add almond flour, coconut flour, baking powder, swerve, and matcha powder then keep whisking, make sure there are no lumps.
Three: Add the butter then whisk one more time.
Four: Pour the batter in a safe microwave mug then sprinkle the chocolate chips on top of the mixture.
Five: Microwave for 90 seconds.
Tip: If you don't have a microwave, this is fine; just pour the batter into a single-serving baking pan and bake in the oven at 180 C/ 350 F for 19-20 minutes.
Variations
- Add some nuts.
- I used chocolate chips as topping; you can also use a dollop of cream, some raspberry jam or simply, sprinkle some swerve powdered on top of it.
- Make it chocolaty, and add 1 teaspoon of cocoa powder to the batter.
