    Mozzarella Cheese Muffins

    My mozzarella cheese muffins are the best keto muffins ever; they are savory, cheesy, and tasty. I made these muffins with mozzarella cheese, almond flour, almond milk, and some seasonings for flavor. They will be ready in just 35 minutes and SO good for breakfast or a snack.

    Mozzarella Cheese Muffins

    I absolutely love these muffins; they are savoury, cheesy, and SO delicious. They are also simple, easy and take no time at all. The best part is that? They are sugar-free and gluten-free.

    If you need something delicious and sugar-free to eat at breakfast or lunch or even as a snack, why not try these delicious and cheese mozzarella cheese muffins, they are low carb and keto-friendly muffins. 

    I've made these muffins with almond flour and only 3 eggs. Therefore, they don't taste like eggs. Also, I have added 1 ½ teaspoon of baking powder to give them fluffiness.

    The mozzarella cheese and the seasonings are the secret of the excellent taste of these savory muffins.

    Almond flour: I used 2 cups of almond flour. Note: Almond flour has a fine texture.

    Baking powder: It helps the muffins to be fluffy and soft.

    Almond milk: I prefer almond milk; however, you may use coconut milk or oat milk.

    Eggs: I used 3 large eggs.

    Mozzarella cheese: The star of this recipe; I used ¾ cup of Mozzarella cheese. I also tested this recipe with Cheddar cheese, and it works so well.

    Butter: I used ¼ cup unsalted butter.

    Seasonings: I used cumin, garlic powder and just a tiny amount of chilli powder.

    How to Make Mozzarella Cheese Muffins

    One: Preheat the oven at 180C / 350F and grease a 12 cup muffin pan with butter or line with muffin liner or

    Two: Using a hand mixer, whisk the eggs until light and fluffy, add the butter, almond milk and keep whisking.

    Three: Add the almond flour, baking powder, salt cumin, garlic powder and chilli powder, then stir everything with a spatula until well combined.

    Four: Fold in mozzarella cheese. Scoop the batter in the muffin pan.

    Five: Bake for 25-30 minutes. Allow it to cool, then serve.

    Serving Ideas

    Serve these cheese muffins for breakfast with Quick Breakfast Casserole For Two or Sweet Rice Porridge.

    You can also serve it as a sevory snack with Strawberry Milk Tea (Boba) or Oat Milk Hot Chocolate .

    Ingredients

    • 2 cups Almond flour

      2 cups Almond flour, 1 ½ teaspoon Baking powder, ¼ teaspoon Salt, ½ teaspoon Cumin, ¼ teaspoon Chilli powder, ½ teaspoon Garlic powder
    • Fold in mozzarella cheese. Scoop the batter in the muffin pan.
      ¾ cup Mozzarella cheese
    • Bake for 25-30 minutes. Allow it to cool, then serve.

    Notes

    • I prefer almond milk; however, you may use coconut milk or oat milk.
    • I used ¾ cup of Mozzarella cheese to make these muffins and I also tested this recipe with Cheddar cheese, and it works so well.
