These muffins are made with almond flour and only 3 eggs. Therefore, they don't taste like eggs. Also, I have added 2 tablespoons of coconut flour to give them fluffiness. The mozzarella cheese and the spices are the secret of the excellent taste of these muffins.
Ingredients you will need to make the cheese muffins:
Make sure to have the below ingredients at your kitchen to be able to make the delicious cheese muffins. This amount will give you 10 cheese muffins.
- Almond flour
- Coconut flour
- Water
- Almond milk
- Eggs
- Salt
- Mozzarella cheese
- Baking powder
- Butter
Spices:
I have used the below spices in this recipe. But it is your choice if you like to use more or less of it. Also, you can replace cumin with dry basil, so don’t worry if you don’t have cumin.
- Cumin
- Garlic powder
- Chilli powder
How to Make Mozzarella Cheese Muffins
- Preheat the oven at 200 C.
- Using a hand mixer, whisk the eggs, then add the butter, almond milk and keep whisking.
- After that, add the almond flour, coconut flour, baking powder, salt and all the spices, then stir everything with a spatula until well combined.
- Then, add the mozzarella cheese and water, stir again.
- After that, Grease a muffin pan.
- Now, place the batter in the muffin pan.
- Bake for 30 minutes.
- Leave it to cool, then serve.
Options for serving the cheese muffin:
Serve these cheese muffins at breakfast with smashed avocado, eggs, cucumber or some pickles and green olive. Furthermore, you can serve it with butter, green tea or keto hot chocolate. Also, you can eat it plain as a snack.
