    Breakfast Casserole For Two

    Because this Quick Breakfast Casserole recipe is For Two I like to cook it in two separate small casserole dishes, but you can make it in one big casserole if you want. The best thing about this casserole is that it is so versatile, you can add almost anything to it.

    This is my go-to easy breakfast dish; I like to saute the onion and garlic in olive oil until the onion softens. I find this technique really adds to the flavor of this dish.

    I also like that I assemble the dish in a few minutes and let the oven finish the job.

    • Eggs: I use large 4 eggs at room temperature in each small casserole.
    • Crushed tomatoes: I use canned crushed tomatoes.
    • Cheddar cheese: I use sharp cheddar cheese for best flavor.
    • Olive oil: To saute the onion and garlic. You may use butter instead if you like.
    • Salt and black pepper: To taste
    • Chilly flakes: Give your dish some heat; if it is not available, you can use cayenne pepper instead.
    • Italian seasoning: If you are not a fan of Italian seasoning, you can replace it with dried thyme, basil or sage.
    • Garlic and onion: I prefer to saute garic and onion to add a delicious flavor.
    • Fresh Parsley: Optional, to garnish the dish.

    How to Make Quick Breakfast Casserole For Two?

    Steps of making the recipe.

    Before you start, preheat the oven to 180C/ 356F.

    First Step: Heat some olive oil in a skillet over medium-high heat. Add the onions and garlic and sauté' until the onion softens about 3-4 minutes. Then add the crushed tomatoes, salt, black pepper, Italian seasoning, and chilli flakes. Simmer for about another 8-10 minutes then turn off the heat. 

    Second Step: Divide the mixture between two small baking dishes or 2 small casserole dishes. Crack the eggs over the mixture in the baking dishes.

    Step Three: Sprinkle the cheddar cheese on the top (you can add some salt and pepper if you like) then bake for 15-20 minutes. 

    Step Four: Garnish with chopped fresh parsley and serve.

    Pro Tips!

    • You can garnish with fresh basil or cilantro instead of parsley.
    • I recommend that you grate the cheddar cheese yourself because freshly grated cheese melts so well and gives the dish a better taste.
    • You may bake this dish in a large casserole dish instead of 2 small casserole dishes.

    Alternatives and Substitutes

    • Use fresh herbs instead of Italian seasonings; you can use thyme, rosemary or basil.
    • Add in some chopped mushrooms.
    • Make your casserole a complete meal and add some veggies such as sweet potatoes, bell peppers, green onion, broccoli, hash browns or some zucchini.
    • Add meat such as, cooked ground beef, ground chicken, shredded turkey or chicken.
    • Make it extra cheesy add mozzarella cheese along with cheddar. You can also add parmesan or shredded Monterey jack cheese. You may also use white cheddar cheese, cottage or cream cheese.
    • Make this breakfast casserole extra creamy, and add half a cup of heavy cream to the egg mixture.

    What To Serve With Breakfast Casserole

    Serve this dish with some fresh fruit, a cup of milk, yogurt or garlic bread. Here are some side dish suggestions:

    • Bread: Gyro Bread.
    • Salad: Malfouf Salad or Italian Tomato And Onion Salad.
    • Muffins: Chocolate Courgette Muffins.
    • Drinks: Thyme Tea
    • Sauces: Serve this dish with hot sauce or ketchup.

    Storage

    To make ahead of time: You can make this egg casserole 2 days ahead of time, just cover it and put in the fridge until needed.

    Freezing: To freeze this casserole, you should bake them first, then allow to cool completely and then wrap them with plastic wrap or transfer to an air-tight container and freeze for 1-2 months. Allow to thaw overnight.

    How to Reheat: Reheat in the oven at 350F / 180C for 20-30 minutes or in the microwave for 2 minutes.

    Can I Use Potatoes in making this casserole?

    Yes, you can use chopped fresh potatoes or hash brown potatoes. However, you will have to adjust the cooking time accordingly.

    Can I Use Bread?

    Yes. You can. Chop the bread into bite-size pieces, toast in the oven for 10-15 minutes, then put in the bottom of the casserole dishes.

    Ingredients

    • 1 tablespoon olive oil
    • 1 can crushed tomatoes
    • 8 eggs
    • 1 teaspoon salt
    • ½ teaspoon ground black pepper
    • ½ teaspoon Italian seasoning
    • ¼ teaspoon chilly flakes
    • 3 cloves garlic , minced
    • 1 onion , chopped
    • ¾ cup cheddar cheese , grated
    • 1 tablespoon parsley , chopped (for serving)

    Instructions

    • Heat some oil in a skillet over medium heat. Add the onions and garlic and sauté' until the onion softens about 3-4 minutes.
