    Looking for the perfect baked egg recipe for breakfast? Then you are in the right place. This breakfast egg casserole is so easy and loaded with eggs, tomatoes, onions, and cheddar cheese. This recipe is one of my favourite breakfast recipes because it is straightforward, doesn't need many ingredients, and you can make it ahead of time.

    I like to make this egg casserole in two separate small casseroles, but you can make it in one big casserole if you want. The best thing about this casserole is that it is so versatile, you can add almost anything to it.

    Breakfast Egg Casserole Ingredients:

    Crushed tomatoes, can
    Eggs
    Salt
    Pepper
    Chilly flakes
    Italian seasoning
    Onion, chopped
    Garlic, minced
    Cheddar cheese, grated
    Parsley, chopped (for serving)

    How to make this breakfast egg casserole?

    Heat some oil in a skillet over medium heat. Add the onions and garlic and sauté' until the onion softens about 3-4 minutes. Then add the crushed tomatoes, salt, black pepper, Italian seasoning, and chilli flakes. Simmer for about another 8-10 minutes then turn off the heat. 

    Now, divide the mixture between two small baking dishes or one big dish. Crack the eggs over the mixture in the baking dishes. Next, sprinkle the cheddar cheese on the top (you can add some salt and pepper if you like) then bake for 15 minutes. 

    Garnish with some chopped parsley and serve.

    Pro Tips:

    • You can garnish with some chopped basil instead of parsley.
    • I recommend that you grate the cheddar cheese yourself because freshly grated cheese melts so well and gives the dish a better taste.

    What to serve with this breakfast egg casserole?

    You can serve this baked eggs with some fruits, a cup of milk, or just a piece of bread.

    Is there an alternative to Italian seasoning?

    If you are not a fan of Italian seasoning, you can replace it with thyme, green onions, or basil. All are excellent and will give a lovely flavour to this dish.
