You can call it Traditional Farmhouse Fruit Cake or spiced cake, however, it is soft, fluffy and perfect for everyday's cake made with dried fruit such as black currant, raisins and spiced perfectly with cinnamon and mixed herbs.

    Traditional Farmhouse Fruit Cake Recipe

This is an old British fruit cake called cornish black cake; some recipes may include dark molasses sugar to give the cake a richer colour. This easy fruit cake was usually served at weddings and other celebration. I call it the dried fruit cake because you can add to it any dry fruits you have in your pantry not only black currant and raisins.

    Traditional Farmhouse Fruit Cake Recipe

This easy English fruit cake recipe, won't take much time to make and doesn't need any fancy ingredients, all from your pantry. Using cinnamon and mixed herbs in making this spiced cake makes it so flavourful and delicious while adding currant and raisins makes it sweet.

How To Make Dried Fruit Cake

    How to make the recipe

Whisking the wet ingredients: I always like to start by whisking the egg well using an electric whisk. After that, add the sugar and continue whisking.

    Add the butter, whisk.

Now, adding the dry ingredients: Sift the flour, mixed herbs, ground cinnamon and baking powder over the egg mixture and whisk.

Adding the dry fruits and nuts: Add the raisin, black currant and almond then mix using a spatula or a whisk.

Preparing for baking: Grease a 22 cm baking dish (I used springform)well with butter. Then pour the batter in the baking dish.

Baking: Bake at 170 C for 45 minutes or until fully baked.

Let the cake cool down then sprinkle the powdered sugar over the top.

    Top Tips!

    • If you want your cake to be nut-free, skip adding flaked almonds.
    • Mixed herbs give the cake a lovely flavour; don't skip adding them. However, if you can't find them, you can replace them with dried ginger or nutmeg.
    • Use eggs at room temperature.
    • You may use half of the amount of butter and half vegetable oil.
    • Add any dried fruits you like, such as apricot, dates or sultana. However, don't use them as a whole; chop them into small chunks.
