How To Make Arlettes - Step By Step
One: Preheat oven to 220ºC and line a baking sheet with parchment paper.
Two: In a small bowl, mix sugar and cinnamon and set aside.
Three: Unroll the puff pastry sheet and brush with a layer of melted butter, then sprinkle with lemon zest.
Four: Tightly roll the pastry horizontally (It will look like a swiss roll), wrap it in plastic wrap and freeze for 40-45 minutes or until firm.
Five: Remove from the freezer and use a sharp knife to cut it into thin slices 1-2 cm slices.
Six: Now, on a lightly floured work surface, roll out the slices of pastry (bottom up) with a rolling pin into a large oval shape and then sprinkle with sugar and cinnamon mix.
Seven: Place them on the baking tray and bake in the oven for 10 minutes until golden, and then flip and bake for a further 5 minutes until golden brown.
Eight: Allow to cool on a cooling rack, then serve and enjoy!
