    Easy Coconut Flour Pancakes (Keto)

    Pancakes are very simple and quick to prepare, especially for breakfast.
    These Keto easy coconut flour pancakes are so healthy and made with greek yogurt.

    Adding greek yogurt to pancakes will make them soft. Also, using coconut flour in this pancake recipe will make them even fluffier, these greek yogurt pancakes will literally melt in your mouth.

    I love topping these sugar-free greek yogurt pancakes with some melted chocolate and chopped strawberries.

    To Make The Coconut Flour Pancakes, You Will Need

    ingredients
    • Eggs
    • Plain greek yogurt
    • Powdered erythritol
    • Vanilla extract
    • Baking powder
    • Coconut flour

    These ingredients will make seven medium-size pancakes (all the measurements are listed in the recipe card below).

    How To Make This Keto Coconut Flour Pancakes with Greek Yogurt

    1. Start by whisking the eggs in a small bowl
    2. Then, add the vanilla extract, powdered erythritol, and continue whisking
    3. After that, add the greek yogurt, and whisk
    4. In a small bowl, add the baking powder to the coconut flour and stir
    5. Finally, add the coconut flour to the eggs mixture, stir
    6. Pour the batter into a measuring cup
    7. Spray a hot pan with oil and start pouring the batter in small batches
    8. Once small bubbles appear on top of the pancakes flip carefully on the other side
    9. Add topping of your choice, enjoy

    Tips And Suggestions For Better Pancakes

    • Using eggs at room temperature gives better results in this pancake recipe.
    • Use a good non-stick pan to help you in flipping the pancakes.
    • If you top these pancakes with something sweet like maple syrup or chocolate, you can escape putting powdered erythritol in the batter unless you have a sweet tooth.
    • I don't recommend storing these pancakes; just make as much as you are going to consume.
