    Tiropita Greek Cheese Pie

    This Easy Greek cheese pie, or Tiropita is a popular Greek breakfast meal, made with crisp filo pastry, feta cheese and topped with sesame seeds.

    What Is Tiropita?

    Tiropita is A popular cheese pie in Greece and the Mediterranean. they are crispy, delicious and loaded with cheese and usually served in breakfast.

    My delicious Greek cheese pie is simple, easy to make and has a lovely spiral shape. My family love this pie; it's so delicious with a cup of Chocolate Milk Tea in the morning. Without further ado, let's talk about what I used to make this recipe.

    Filo Pastry

    I like To use Filo pastry because it is thin dough sheets that are easy to stuff and wrap, which makes it the perfect pastry for making this spiral-shaped Greek pie. Also, when baked, it becomes flaky and crispy.

    Cheese

    I use in making this Greek cheese pie a delicious blend of mozzarella, feta, and cheddar cheese; yes, this pie is heavy on cheese!

    • Feta: It's crumbly, salty and delicious.
    • Cheddar: I use it because of it's sharp flavour, and it also gives richness to the filling.
    • Mozzarella: It has a mild flavour, and it melts fast, giving a gooey, melty filling.

    Some people like to use goat cheese along with feta cheese. However, I am not a fan of goat cheese, which is why I use mozzarella and cheddar instead.

    For me, what I really want to try is cream cheese; it seams to me a good addition to this pie. My tric to use is to use a good quality cheese.

    Milk-Egg Mixture

    You may wonder why add this milk-egg mixture to the pie. Well, this milk mixture is important because it gives the pie a fluffier and softer texture.

    You can use any kind of milk you want. I used whole milk, but you may use skimmed milk, non-dairy milk, or you can even use half cup milk (whole or skimmed) and a half cup of plain Greek yoghurt. You will get the same result.

    I also used both melted butter and olive oil for good flavour and egg to help give the pie a golden brown colour.

    My advice to you is to use eggs at room temperature, it will help the eggs to mix evenly with other ingredients

    Toppings

    I top my Greek cheese pie with a mix of black seeds (Nigella sativa) and sesame seeds. They really give this recipe a delicious flavour, a lovely smell and a crunchy topping. However, omitting them won't affect the final result of this delicious pie.

    How To Make Tiropita Greek Cheese Pie?

    Here is my method of making Tiropita:

    Before starting, preheat the oven to 350F / 180C and line a 22cm springform or baking pan with parchment paper.

    All the filling ingredients are on a plate. All the milk-egg mixture ingredients are in a jug.

    Prepare the filling: On a plate, mix mozzarella, cheddar, feta cheese, and chopped parsley. 

    Prepare the milk mixture: In a jug, combine the eggs, milk, oil, melted butter, salt, and ground black pepper.

    To Prepare the filo sheets: Unroll the filo sheets then cover them with a clean kitchen towel.

    Line a filo sheet on a flat surface, brush with the milk mixture, add spoon of the filling and roll. Swirl to make spiral-shape and put in the pan.

    Making the spiral-shaped cheese pie: Line a filo sheet on a flat surface, brush it with the milk mixture, and spoon about two tablespoons of the cheese mixture in a line. Now, roll the sheets tightly, then swirl it to form a circle, and put in the middle of the springform.

    Pro Tip: Cover the filo sheets with a clean kitchen towel while working with them because they tend to dry very quickly. Don't use a wet towel to cover them, it will make the filo sheets wet and soggy; only use a clean, dry towel.

    Repeat making swirls to form the spiral-shaped cheese pie.

    Repeat until all the filo sheets are used. After that, pour the rest of the milk mixture over the pie then sprinkle sesame seeds and black seeds on top of it.

    Baking: Bake it for 30-40 minutes. Remove from the oven, and let it cool down, then cut and serve and enjoy!

    Serving Ideas

    I love to serve this dish with Lamb Seekh Kebab or Oven Baked Chicken Thighs for dinner.

    For lunch, I usually serve it with Korean Carrot Salad (Markovcha), Shrimp Pasta Salad or Beetroot and Goats Cheese Salad.

    Store, Freeze & Make In Advance

    To Store: Cover the pie well with plastic wrap or foil, then place in the fridge for 3-4 days.

    To Freeze: Cut the pie, wrap the pieces in plastic wrap, place them in a well-sealed container, and keep in the freezer for 1-2 months.

    Make In Advance: You can make it 3 days ahead of time, keep it in the fridge and add the milk mixture just before baking.

    Reheating Instructions: To reheat in the oven, put the pie in a baking dish then put in the oven for 15-20 minutes at 180C / 350F. In the microwave, put in a microwave-safe dish and microwave for about 2 minutes.

    Tools Used In Making Tiropita

    Springform: If you don't have a springform you can make the pie in a baking dish.

    Pastry brush: I used it to brush the filo sheets with the milk mixture and grease the springform.

    • 1 packet filo pastry sheets , (400 g)
    • 1 cup mozzarella cheese
    • 1 cup cheddar cheese
    • 100 g feta cheese, crumbles
    • ½ cup fresh parsley, chopped

    Milk mixture

    • 2 eggs
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper
    • 1 cup whole milk
    • ¼ cup butter , melted
    • ¼ cup olive oil

    • 1 tablespoon black seeds (Nigella sativa)
    • 1 tablespoon sesame seeds

    Notes

      This pie is my best savoury dish to serve at lunch and sometimes dinner with salad or chicken. So delicious! My mother used to make this when I was a child. When I saw this recipe, I baked it, and it was so good.
