    African Spinach Stew With Rice

    This African spinach stew with rice is a flavourful, delicious and easy to make. It makes a wonderful hot dinner for cold winter days.

    Spinach Stew With Rice

    I have learned to cook this spinach stew from my mother, but I have twisted the recipe a little bit by adding the hot sauce to it, which add a lovely chilliness to the stew.

    This spinach stew is totally delicious on its own, but adding any chicken or meat makes it a wonderful dinner.

    Spinach is my family's favourite vegetable. We add it to almost everything; even sometimes, we love to eat it raw on chicken sandwiches.

    If you are Spinach lover like me try making this stew; I believe you will find it so delicious and comforting.

    African Spinach Stew Ingredients

    Ingredients needed for making the recipe.
    • Fresh spinach leaves: Better than frozen spinach.
    • Onion & Garlic : Minced.
    • Tomato sauce
    • Rice: I prefer long grain.
    • Salt and ground pepper: To taste
    • Ground coriander
    • Water or chicken stock: Chicken stock is so good with Spanish. However, if you like the stew lighter, use water.
    • Butter: I like to use butter but you can use olive oil instead if you want.
    • Hot sauce: To add a spicy flavor.

    How To Make African Spinach Stew With Rice

    One: In a large pot, add the butter and minced onion on medium heat for 1 minute, stir until the onion becomes translucent.

    Two: Add the spinach leaves, tomato sauce, salt, pepper and ground coriander.

    Three: Then add rice, minced garlic and water and bring to a boil, keep cooking for about 15 minutes. Then, lower the heat and let it simmer for another 10 minutes or until the rice is fully cooked.

    Four: Garnish with some chopped fresh coriander leaves (optional). Serve hot.

    Top Tips!

    • I use a tablespoon of hot sauce in this recipe to flavour it; if that is too much for you, feel free to reduce it to ½ tablespoon or even skip it.
    • This recipe is vegetarian. However, if you are a meat lover, you can add some cooked chicken, turkey, shrimp, fish or beef.
    • Add fresh herbs such as cilantro, dill or parsley.

    What To Serve With Spinach Stew?

    I prefer to serve any meat or chicken dish with this delicious stew. Here are some of my suggestions.

    Storage

    To Store the stew: I store leftovers in the fridge for 2-3 days.

    Freezing: This stew freezes so well. Just put it in a leakproof container and put it in the freezer for 1-2 months.

    To reheat: Allow it to thaw at room temperature, put it in the microwave, or heat it on the stove.

    Ingredients

    • 300 g fresh spinach leaves
    • 1 onion, minced
    • 3 cloves garlic, minced
    • ½ cup tomato sauce
    • ½ cup rice
    • 5 cups water or chicken stock
    • 2 tablespoon butter
    • 1 tablespoon hot sauce
    • 1 teaspoon ground coriander
    • ½ teaspoon ground pepper
    • ½ teaspoon salt

    Instructions

      I just made this! Omg it’s sooooo good! I usually pay $6 for a small bowl without rice but now I have a whole pot to eat and freeze! Thank you! I used tomato paste instead of sauce just mixed it with water.
