This African spinach stew recipe is a flavourful, delicious and easy to make. It makes a wonderful hot dinner for cold winter days.
I have learned to cook this spinach stew from my mother, but I have twisted the recipe a little bit by adding the hot sauce to it, which add a lovely chilliness to the stew.
This spinach stew is totally delicious on its own, but adding any chicken or meat makes it a wonderful dinner.
Spinach is my family's favourite vegetable. We add it to almost everything; even sometimes, we love to eat it raw on chicken sandwiches.

African Spinach Stew Ingredients
- Fresh spinach leaves: Better than frozen spinach
- Onion, minced
- Garlic, minced
- Tomato sauce
- Rice: I prefer long grain
- Salt and ground pepper: To taste
- Ground coriander
- Water or chicken stock: Chicken stock is so good with Spanish. However, if you like the stew lighter, use water
- Butter: You can use olive oil instead
- Hot sauce: To add a spicy flavor.
How To Make African Spinach Stew
- In a large pot, add the butter and minced onion on medium heat for 1 minute, stir until the onion becomes translucent.
- Add the spinach leaves, tomato sauce, salt, pepper and ground coriander.
- Then add rice, minced garlic and water and bring to a boil, keep cooking for about 15 minutes. Then, lower the heat and let it simmer for another 10 minutes or until the rice is fully cooked.
- Garnish with some chopped fresh coriander leaves (optional). Serve hot.
Top Tips!
- If you don't fancy spicy food, remove the hot sauce from the ingredients.
- This recipe is vegetarian. However, if you are a meat lover, you can add some cooked chicken, turkey or beef.

I prefer to serve any meat or chicken dish with this hot stew. Here are some suggestions.

Storage
To Store the stew: Store leftovers in the fridge for 2-3 days.
Freezing: This stew freezes so well. Just put it in a leakproof container and put it in the freezer for 1-2 months.
To reheat: allow it to thaw at room temperature, put it in the microwave, or heat it on the stove.
