I am a big fan of eggplants, and I couldn't resist sharing this incredibly easy Eggplant Ground Beef Casserole that I have just made. This Casserole turned out AMAZING! It is a delicious combination of roasted eggplants, tomato sauce, garlic and ground beef. Yum!
Eggplant Ground Beef Casserole
My Eggplant Ground Beef Casserole is super simple. First, I cooked the beef, then roasted the eggplant slices, and finally, I mixed both in the casserole and baked to perfection. SO easy!
This dish is super flavorful. I have seasoned the beef and the tomato sauce so well. I also prefer to roast the eggplants to make this casserole light and healthy.
This dish is perfect for family dinners; I like to serve it with Creamy Coleslaw or Spicy Potato Salad With Spinach.
Ingredients

Ground beef: I used extra lean ground beef. You can use ground chicken instead.
Onion: I used I medium size onion to cook the ground beef.
Seasonings: I used ground ginger, chili powder, ground cinnamon, ground black pepper, salt, cloves and bay leaf.
Eggplants: I used 4 medium eggplants; I peeled and sliced them into medium-thickness rings.
Tomato sauce
Garlic: I used it to flavor my tomato sauce.
Step- By-Step Instructions
Cook The Beef
In a small pot add the ground beef, minced onion and all the spices on medium heat.
Then, add ¼ cups of water, cook for 20 to 25 minutes or until all the liquids have reduced and the meat is fully cooked.
Roast The Eggplants
Peel the eggplants then wash and drain. Then, spray an oven sheet with oil then place the eggplants and spray the top and bottom of each piece with oil.
After that, bake for 20 minutes or until the eggplants cooked.
Assemble The Casserole
In a small bowl, add the tomato sauce, minced garlic, salt and pepper then stir.
Place a layer of the grilled eggplants in an oven dish and top with some of the tomato sauce. Then, add a layer of the beef.
Add some tomato sauce. Repeat with the remaining eggplants. Then, bake for 40 minutes.
After that, garnish with some chopped parsley. Serve hot.
Variations
- Top your casserole with mozzarella or cheddar cheese.
- Add a pinch of dried basil, thyme or Italian seasoning mix.
- Feel free to add roast some potatoes or bell pepper and add them to the eggplant casserole.
Storage
I store this casserole in the fridge for 4-5 days, no problem. It also freezes beautifully for 1-2 months.
