    One-pan meals always make my life easier after a hectic day. I only need 10-13 minutes to prepare the meal and then leave the oven to do the rest. I simply can’t stop making the one-pan meals; Very simple! Very versatile!

    One Pan Chicken And Veggies Ingredients

    To make this easy one-pan dinner you will need:

    • Peas
    • Carrot, chopped
    • Chicken breasts
    • Onion, sliced
    • Cheddar cheese, shredded
    • Tomato sauce
    • Salt
    • Ground black pepper
    • Garlic powder
    • Parsley, chopped

    Tips: 

    • Use frozen peas or fresh ones; I used frozen peas.
    • I prefer using a fresh carrot because when the frozen carrot defrosts, it becomes soggy.
    • You can use courgette as a replacement of the peas.

    How To Make One-Pan Chicken And Veggies Recipe

    Preparing the chicken breasts: Rinse the chicken and cut them lengthwise then pat them dry.

    This second preparation step is totally (optional): Pour two tablespoons of olive oil in a large skillet and arrange the chicken in the skillet then cook for 1-2 minutes on each side. This step isn't mandatory. I make this step for extra tenderness to the chicken, but you can skip it, and you will get the same result.

    Assemble everything: In a medium-sized baking dish first put the peas and carrots then arrange the chicken on the top of them.

    After that, add the onion slices between the chicken breasts.

    Preparing the sauce: Mix the tomato sauce with all the spices (garlic powder, salt, black pepper ) then pour over the chicken.

    
     

    Adding the cheese: Sprinkle a generous amount of cheese on the top of each chicken breast.

    Baking: Bake at 170 C for 40-45 minutes.

    Garnish with some chopped parsley then serve.

    How To Serve This One-Pan Dinner

    This recipe works well as a stand-alone chicken and veggie meal, but if you want to stretch the meal further, you can serve it with rice, noodles, macaroni or even bread along with some salad; it is all personal preferences.

    Ingredients
      

    • 2 cups peas
