Super easy, cheesy chicken and vegetable bake - tender chicken breasts baked on top of peas, carrots, and red onion with tomato sauce, all cooked together in one pan and in just 40 minutes for a simple meal!
Cheesy Chicken And Vegetable Bake
One-pan meals always make my life easier after a hectic day. I only need 10-13 minutes to prepare the meal and then leave the oven to do the rest. I simply can’t stop making the one-pan meals; Very simple! Very versatile!
For the cheese in this recipe, I used cheddar because it really adds a good flavor; however, I also tested the recipe with mozzarella cheese, and it was good but not as good as the version with the cheddar cheese.

Ingredients

Peas: Use frozen peas or fresh ones; I used frozen peas.
Carrot: I prefer using a fresh carrot because when the frozen carrot defrosts, it becomes soggy.
Chicken: I used chicken breasts however, chicken thighs also work well.
Onion: I used red onion.
Cheese: I used shredded Cheddar cheese, you may use mozzarella if you prefer.
Tomato sauce: any kind you have on hand; it adds a delicious flavor.
Seasonings: Salt, ground black pepper, garlic powder
Parsley: I used chopped fresh parsley to garnish my dish.
How To Make One-Pan Chicken And Veggies Recipe
Preheat the oven to 180c / 350f.
Prepare the chicken breasts: Rinse the chicken and cut them lengthwise then pat them dry.
This second preparation step is totally (optional): Pour two tablespoons of olive oil in a large skillet and arrange the chicken in the skillet then cook for 1-2 minutes on each side just until brown.
Assemble everything: In a medium-sized baking dish first put the peas and carrots then arrange the chicken on the top of them.
After that, add the onion slices between the chicken breasts.
Prepare the sauce: Mix the tomato sauce with all the spices (garlic powder, salt, black pepper ) then pour over the chicken.
Adde the cheese: Sprinkle a generous amount of cheese on the top of each chicken breast.
Baking: Bake covered with a foil sheet for 25 minutes then uncover and bake for 5 more minutes.
Garnish with some chopped parsley then serve.
How To Serve
This recipe works well as a stand-alone chicken and veggie meal, but if you want to stretch the meal further, you can serve it with Mushroom Fried Rice or Turmeric Rice.
You can also serve it with Angel Hair Pasta.
