    Lazy Cake - Chocolate Biscuit Cake

    This Lazy Cake, also called chocolate biscuit cake, is rich, crunchy, and chocolaty. It took me less than ten minutes to put it together, but I had to wait until it cooled down in the fridge to enjoy it with a cup of tea.

    Lazy Cake Recipe

    I made this SUPER EASY Lazy Cake (no-bake chocolate biscuit cake) with only 4 ingredients.

    I just mixed biscuit crumbs, chocolate, heavy cream, and melted butter until combined, and then I chilled it until firm. I didn't use the oven, and my kids LOVE it so much.

    I don't know why it is called that name, but I think it is because it is sooo easy to make, and it doesn't need any baking or maybe because it doesn't call for many ingredients.

    I also like to top it with fresh fruit, anything I have in the fridge; this time, I had raspberries and blueberries.

    You'll Need

    • Biscuits: I used digestive biscuits.
    • Heavy cream
    • Butter: I prefer unsalted butter.
    • Semi-sweet chocolate chips: I prefer using semi-sweet chocolate.

    Tip: Using semi-sweet chocolate makes it sweet enough that you will not need to add sugar to this recipe. However, if you like to use dark chocolate, you may need to add ¼ cup of sugar to the chocolate sauce.

    • Toppings (optional): I used powdered sugar, raspberries, and blueberries.

    How To Make Lazy Cake?

    Prepare the Biscuit: Put the biscuits in a large zipped bag. Use a rolling pin to smash the biscuits into small pieces then transfer into a bowl.

    Making the chocolate sauce.

    Make the chocolate sauce: In a saucepan, heat heavy cream and butter until the butter melts. Then turn off the heat and put the chocolate chips in the hot mixture, whisk until melts.

    Make the Cake: Pour the chocolate mixture over the biscuits, mix well until all the biscuits are coated with chocolate.

    Refrigerate the cake: Transfer the mixture into a 20cm springform (lined with parchment paper) then refrigerate for 1-2 hours.

    Add the toppings and serve: Next, take the cake out of the springform, sprinkle powdered sugar on the top then serve it with blueberries and raspberries.

    Can I make this Chocolate biscuit Cake ahead of time?

    Of course, you can make it 2-3 days in advance. Actually, this cake takes time in the fridge to firm. So, making it in advance will give it enough time to firm.

    Can I freeze this lazy cake?

    Definitely, this cake freezes so well, just wrap in foil or plastic wrap, put in a well-sealed container, then put in the freezer for up to 2 months.

    Ingredients

    • 400 g digestive biscuits
    • 1 cup heavy cream
    • ¼ cup butter
    • 2 cups semi-sweet chocolate chips
