    Skillet Breakfast Scramble

    Skillet Breakfast Scramble is a delicious egg breakfast recipe loaded with ground beef, spinach, and bell pepper. It’s a flavorful, hearty, and filling dish that comes together easily in one pan.

    Skillet Breakfast Scramble

    I really enjoyed this Breakfast Scramble! You can make it for breakfast, lunch, or even light dinner. It is so delicious!

    In this recipe, I used leftover pre-cooked ground beef, so don’t use raw ground beef. Feel free to skip the ground beef to make this dish vegetarian, or replace it with mushrooms.

    I also recommend using fresh spinach for a better taste and texture.

    To Make Skillet Breakfast Scramble, You Will Need:

    Eggs: I use 4 large eggs.

    Beef: I use precooked ground beef.

    Vegetables: I use tomatoes, green bell peppers, yellow bell peppers, onion, and fresh baby spinach leaves.

    Seasonings: I season this breakfast skillet with just salt and ground black pepper.

    I also use green olive, and I garnish the skillet with freshly chopped parsley.

    Tip: Top your skillet with some shredded cheese instead of parsley.

    How to Make Skillet Breakfast Scramble

    Steps of making the recipe.

    One: Chop the onions, green and yellow bell peppers and tomatoes to small pieces.

    Two: In a medium-sized skillet add the butter, chopped bell peppers and onions, stir on medium heat until softened.

    Three: Add the ground beef and spinach, and stir. Then add the tomatoes, salt and ground pepper.

    Four: Add the eggs and stir until all ingredients mix well. Lower the heat for 2 minutes, and then turn off the heat.

    Five: Add green olives on top. Garnish with some fresh chopped parsley and enjoy!

    Serving Ideas

    I recommend serving this breakfast skillet with Gyro Bread or along with salad such as Elote Corn Salad (Mexican).

    You can also serve it with just drinks, such as tea, coffee or  Oat Milk Hot Chocolate.

    Ingredients

    • 250 g pre-cooked minced beef
    • 2 tablespoon tomato sauce
    • ⅓ cup chopped tomato
    • 1 green bell pepper
    • 1 yellow bell pepper
    • 1 onion
    • ½ cup fresh baby spinach leafs
    • 4 eggs
    • ½ teaspoon salt
    • ½ teaspoon ground black pepper
    • ¼ cup green olive
    • 1 tablespoon chopped parsley

    Instructions
