    Delicious garlicky sweet potato pasta recipe made by mixing cooked pasta of your choice with a rich, creamy sweet potato parmesan sauce!

    This homemade sweet potato sauce is super flavourful with a sweet and savoury taste. Your dinner will be ready in just 45 minutes!

    My family and I are pasta lovers, and this dish is absolutely my favourite. When I want to wow my family, I usually make this easy dish and serve it with Boom Boom Shrimps or Fish Patties.

    About Sweet Potato Pasta

    • Taste: This dish offers a subtle sweetness from the sweet potato.
    • Texture: A creamy texture would be observed, all thanks to the heavy cream and parmesan cheese.
    • Effort: No effort at all.
    • Time: It will take 30 minutes to bake the sweet potatoes and 15 minutes to cook the pasta. So, it will be ready in just 45 minutes.
    • Flavour: Flavoured with dried basil and paprika, which give the dish a more sweet and savoury flavour.

    Let’s talk about the ingredients you will need to gather for making Sweet Potato Pasta:

    Pasta of Your Choice. You can choose from a wide variety of pasta you would like to use in this recipe. Some suggestions are bowtie pasta, penne, and rigatoni. Take note that your choice of pasta will not affect the taste of the recipe at all, so feel free to choose your favorite.

    Sweet Potatoes. This is the base ingredient of your pasta dish and is the one responsible for the primary flavor. Make sure you are choosing the sweet potatoes with the best quality from your local market.

    Garlic. Allow a more flavorful sweet potato sauce with the addition of this important flavoring agent.

    Olive Oil. It makes your sweet potato rich in flavor and texture.

    Seasonings: Salt, Dried Basil, and Paprika. Salt balances all the flavors found in this recipe, dried basil helps the dish to become more sweet and savory, and paprika gives sweet pepper flavor without the spice.

    Heavy Cream. Heavy cream is responsible for helping your sweet potatoes create a thicker and creamier sauce.

    Grated Parmesan. A pasta is indeed incomplete without the subtle cheesy flavor, add grated parmesan to complete the recipe.

    Parsley to Garnish. Finish your dish by garnishing it with parsley.

    • Use sunflower oil instead of olive oil since sunflower oil merely does its chore of helping your ingredients cook and would not impart any added flavor to the dish.
    • If you want this recipe to taste more creamy and cheesy than it already is, add ricotta to your sweet potato sauce.
    • Perhaps you would like to add some spice to this dish so that it will have a more interesting tone. To achieve that, substitute paprika with a little bit of cayenne pepper powder.

    One (bake the sweet potatoes): Line a baking sheet with parchment pepper or Grease with oil, place sweet potato and garlic cloves in the baking sheet.

    Two: Drizzle with oil and season with salt, paprika, and basil. Bake for 30-40 minutes or until the sweet potato is soft and tender.

    Three (cook the pasta): Now, In salted boiling water, cook the pasta according to the packet instructions.

    Four (make the sweet potato): Squeeze the garlic out of the skin and put it in the food processor. Add sweet potato, h cream, and Parmesan cheese.

    Five: Beat until it reaches a smooth consistency. If the sweet potato sauce is too thick, you can add 1-2 tablespoons of water to loosen it.

    Six (mix pasta with the sauce): In a mixing bowl, mix the cooked pasta and the sweet potato sauce until combined.

    Seven: Garnish with parsley and Parmesan, then serve.

    • Use Bunch Porto Rico or Garnet type of sweet potatoes for a sweeter and richer outcome of this dish.
    • Sometimes, I use whole wheat pasta in making this dish; the substitution is barely noticeable.
    • Don't make your sweet potato sauce too thick in consistency or else the whole dish would appear too dry in texture.
    • Serve this dish a few minutes after it is done cooking since it is preferable to eat it before it completely cools down.

    Serving Suggestions

    Personally, I feel that pasta is always good to pair with fresh salad such as Tomato And Onion Salad or Elote Corn Salad.

    Sometimes I serve this dish with simple Garlic Bread Grilled Cheese and a cold drink such as Korean Strawberry Milk.

    You can also serve it with Vegetarian Stuffed Portobello Mushrooms or Crispy Chicken Patties.

    Ingredients

    • 2 Sweet Potatoes , peeled and cut into chunks
    • 250 g Pasta of your choice
    • 4 Cloves Garlic , leave in skins for roasting
    • 2 tablespoon Olive Oil
    • ½ teaspoon Sea Salt
    • 1 teaspoon Paprika
    • 1 teaspoon Dried basil
    • 150 ml Heavy cream
    • 50 g Parmesan , grated
    • 1 tablespoon Parsley , chopped

    Instructions
