This sweet potato pasta is incredibly flavorful, creamy and healthy. Perfect for a quick and easy vegetarian family dinner.

Sweet Potato Pasta
My family and I are pasta lovers, and this dish is absolutely our favorite. When I want to wow my family, I usually make this easy dish and serve it with Boom Boom Shrimps or Fish Patties.
This dish has a super creamy texture, and homemade sweet potato sauce is super flavorful; I also flavored it with dried basil and paprika to add an extra layer of delicious flavor.
What makes this dish even better is that it is effortless! It took just 30 minutes to bake the sweet potatoes for the sauce and 15 minutes to cook the pasta. So, it will be ready in just 45 minutes.

You'll Need

Pasta. I use pasta shells. However, bowtie, penne, or rigatoni are also suitable for this dish.
Sweet Potatoes. Choose fresh, firm, sweet potatoes for the best flavor.
Garlic. To flavor the sweet potato sauce.
Seasonings: I use salt, dried basil, and paprika.
Heavy Cream. It adds richness and creaminess to the sauce.
Grated Parmesan. It balances the sweetness of the sweet potatoes and adds a rich flavor.
Parsley: Just to garnish the dish.
How To Make This Dish

One (bake the sweet potato): Line a baking sheet with parchment pepper or Grease with oil, place sweet potato and garlic cloves in the baking sheet.
Alternatively: You may also follow this baked sweet potatoes recipe.
Two: Drizzle with oil and season with salt, paprika, and basil. Bake for 30-40 minutes or until the sweet potato is soft and tender.

Three (cook the pasta): Now, In salted boiling water, cook the pasta according to the packet instructions just until al dente.
Tip: Don’t overcook the pasta so it doesn't get mushy.
Four (make the sweet potato sauce): Squeeze the garlic out of the skin and put it in the food processor. Add sweet potato, heavy cream, and Parmesan cheese.
Five: Beat until it reaches a smooth, creamy consistency. If the sweet potato sauce is too thick, you can add 1-2 tablespoons of water to loosen it.
Tip: Don't make your sweet potato sauce too thick in consistency; to thin it, add some milk or water.
Six (mix pasta with the sauce): In a mixing bowl, mix the cooked pasta and the sweet potato sauce until combined.
Seven: Garnish with parsley and Parmesan, then serve.

Serve It With
Personally, I feel that pasta is always good to pair with fresh salad such as Tomato And Onion Salad or Elote Corn Salad.
Sometimes I serve this dish with simple Garlic Bread Grilled Cheese and a cold drink such as Korean Strawberry Milk.
You can also serve it with Vegetarian Stuffed Portobello Mushrooms or Crispy Chicken Patties.
