    This one pan chicken thighs and potatoes is a flavourful meal, no fancy ingredients, no chicken marinade and all made in one pan for simple prep and easy cleanup.

    One Pan Chicken Thighs And Potatoes

    In this recipe, I have used chicken thighs, but if you don't fancy them, you can use any other part of the chicken. However, baked chicken thighs in this recipe are juicy and crispy. Also using garlic in this recipe makes the chicken and potato very aromatic.

    Baking potatoes with chicken in one pan makes the potatoes absorb the juices from the chicken thighs and make a super delicious meal.

    Recipe Ingredients

    All the ingredients you need to make this recipe are below.

    • Olive oil
    • Garlic, minced
    • Chicken thighs
    • Potatoes
    • Parsley, chopped

    Spices

    • Salt
    • Ground black pepper
    • Cayenne pepper
    • Cajun seasoning
    • Fresh thyme

    How To Make One Pan Chicken Thighs And Potatoes

    How to make the recipe step by step

    Preparing the potatoes: Wash the potatoes, peel then cut them however you like.

    Seasoning the chicken: In a bowl, mix minced garlic, olive oil, cayenne pepper, cajun seasoning, salt, pepper and thyme.

    Put the chicken in the mixture and massage the chicken with the spices well then set aside.

    Baking: Firstly, preheat the oven at 180C.

    In a baking dish, spread the potatoes then seasoned them with some salt and pepper.

    Top the potatoes with the chicken then bake for 50 minutes.

    Garnish with chopped parsley then serve.

    Tips and variations

    • You can skip peeling the potatoes.
    • If fresh thyme isn't available, you may use dried thyme.
    • Replace thyme with sage or rosemary.

    What to serve the chicken and potato casserole with

    I prefer to serve this one-pan meal with a green salad, coleslaw or any salad you fancy. Also, you can serve it with white rice or any of the dishes below.

    Ingredients

    • 4 tablespoon olive oil
    • 8 cloves garlic minced
    • 11 bone-in chicken pieces
    • 1 kg potatoes
    • 1 tablespoon parsley chopped

    Spices

    • 1 teaspoon salt
    • ½ teaspoon ground black pepper
    • ¼ teaspoon cayenne pepper
    • 1 teaspoon cajun seasoning
    • 1 sprig fresh thyme

    Instructions
